Panna Cotta & Berry compote

INGREDIENTS

DIRECTIONS

for the panna cotta

2 sheets

gelatine

bloom gelatin sheets in cold (!) water (it will dissolve in warm water, so make sure the water is cold)

200 ml

1 tsp. (5g)

1 tsp.

1 pinch

high protein milk

cornstarch

vanilla extract

salt

sweetener (to taste)

Combine the high protein milk, corn starch, bourbon vanilla, salt and sweetener of choice in a pan and bring to a boil under constant stirring

Once the mixture thickens, pour it into a rounded bowl or mug and let it cool off completely in the fridge (3-4 hrs)

for the panna cotta

1/2 tsp

berries

water

cornstarch

sweetener (to taste)

Combine the berries (fresh or frozen), water, corn starch, and sweetener in a small pot and bring to a boil

Gently stir until the compote thickens

To serve, loosen the edges of the panna cotta with a knife, cover the mug/bowl with the plate you want to serve the panna cotta on, and flip them over together. Now gently shake the them together until the panna cotta slides out. If It feels like it’s stuck, try warming up the outside of the mug/bowl under running hot water (but be careful not to get any water inside the mug), this should melt the edges of the panna cotta a little bit and it should come out more easily

Serve with warm or cool berry compote and enjoy!

 

* you can also just leave the panna cotta in the jar/mug you made it in and serve it with the berry compote on top or on the side – just as delicious minus the hassle of unmolding!
